My kids love to have waffles or eggs, but I like to treat myself to something healthy and beautiful – like this smoothie bowl! Smoothie bowls are so fun to make and eat – they are colorful, full of different tastes and textures, and good for you. What’s not to Love?

BLUEBERRY OAT COCONUT SMOOTHIE BOWL

Ingredients:

1/2 cup Vanilla Almond Milk
1/2 cup Vanilla Yogurt
1 cup Spinach
¼ cup Instant Oats
1 cup frozen Blueberries
1 frozen Banana

Toppings: Fresh blueberries, chopped walnuts, toasted coconut

Directions:
Combine the almond milk, yogurt, spinach, oats, blueberries and banana into a blender and process until smooth.
Pour the mixture into a bowl and top with fresh blueberries, chopped walnuts, and toasted coconut.
Serve immediately.
