I love breakfast on weekends. Weekends are when I have a little bit of extra time to cook and serve something extra special. My kids love to have waffles or eggs, but I like to treat myself to something healthy and beautiful – like this smoothie bowl! Smoothie bowls are so fun to make and eat – they are colorful, full of different tastes and textures, and good for you. What’s not to Love?
Whip this blueberry oat coconut smoothie bowl up for your next weekend breakfast!
BLUEBERRY OAT COCONUT SMOOTHIE BOWL
Ingredients:
1/2 cup Vanilla Almond Milk
1/2 cup Vanilla Yogurt
1 cup Spinach
¼ cup Instant Oats
1 cup frozen Blueberries
1 frozen Banana
Toppings: Fresh blueberries, chopped walnuts, toasted coconut
Directions:
Combine the almond milk, yogurt, spinach, oats, blueberries and banana into a blender and process until smooth.
Pour the mixture into a bowl and top with fresh blueberries, chopped walnuts, and toasted coconut.
Serve immediately.
