Frittata Recipes – Holiday Brunch
With the holidays is just around the corner, there isn’t a better time to honor your family with breakfast in bed or Christmas Brunch and Frittata Recipes like this easy veggie frittata are perfect for the menu. Frittatas are simple yet look and taste amazing! If you’ve never made a frittata before, it is an Italian flat omelet and is created in a stove top skillet then finished off in the oven. Frittata recipes are great for any occasion and take little time or work.
Frittata Recipes – Mother’s Day Brunch Easy Veggie Frittata
Ingredients & Supplies:
- oven safe skillet
- silicone spatula
- 6 extra large egg
- 1/4 cup skim milk
- diced red onions
- diced green peppers (you can also add red peppers for color)
- diced potatoes
- 1-2 tbsp olive oil
- 1/4 cup cheddar cheese
- salt, pepper, and garlic salt to taste
Instructions
Preheat the oven to 375 degrees
Step 1
Saute the veggies in olive oil over medium heat until tender, seasoning with salt and pepper. They can be combined in one pan for cooking.
Step 2
Coat large oven safe skillet with olive oil and bring to medium heat on stove top.
Step 3
Mix eggs and milk until well beaten. Add salt, pepper, and garlic salt and poor into heated skillet. The egg mixture should be approximately 1/4″ to 3/8″ deep in the bottom of the skillet.
Step 4
Cook the egg mixture over medium heat. Do NOT stir. Use a silicone spatula to carefully release the egg mixture from the side walls of the skillet as it cooks to keep it from sticking. Allow the egg to begin bubbling, becoming partially cooked from the bottom up.
Step 5
Add the veggies to the partially cooked egg mixture. Again, do not stir but distribute them evenly over the egg. Allow to cook on medium heat for an additional 5 minutes.
Step 6
Top the egg and veggie frittata evenly with the shredded cheese and place in the preheated oven for 10-15 minutes or until the cheese is completely melted and the egg begins to brown.
Remove the frittata from the oven, cut into wedges, and serve. You’ll love how beautiful and golden brown the eggs become in the perfect frittata.
