We found this recipe in our clean eating meal plan and wanted to bring it back! YUM! This Almond Crusted Chicken is made with healthy seasonings and a big hit with the kids.
Ingredients:
Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup whole-wheat bread crumbs
1 1/2 teaspoons cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon celery salt
1 1/2 teaspoons extra-virgin olive oil
4 large eggs
1 pound chicken breast
Instructions:
1. Preheat oven to 375°F. Line baking sheet with foil. Set a wire rack on the baking sheet and coat it with canola oil cooking spray.
2. Place almonds, bread crumbs, cajun seasoning, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the cajun seasoning is mixed throughout, about 1-minute. With the motor running, drizzle in extra virgin olive oil; process until combined. Transfer the mixture to a shallow dish.
3. Whisk eggs in a second shallow dish. Cut each chicken breast into 3 or pieces, Add cut chicken breasts into eggs and turn to coat. Transfer each chicken breast piece to the almond mixture; turn to coat evenly. (Discard any remaining eggs and almond mixture). Place the chicken breast pieces on the prepared rack and coat with cooking spray; turn and spray the other side.

- 4. Bake the chicken breast pieces until golden brown, crispy, and no longer pink in the center, 20 to 25 minutes.
